turkey tacos

I wanted to share one of our families favorite meals... Turkey (or beef or buffalo) Soft Tacos

1# ground turkey, beef or buffalo
chopped onion
garlic, chili powder, cumin, paprika, Montreal Steak Seasoning, worchestshire sauce
1 cup rice (I bake it at 400F with 2 1/2-3 cups of water until it is done, about 1-2 hours)
1 can black beans
1 can Rotel tomatoes

Brown ground turkey and onions. When almost done, add seasoning and mix. I mix seasoned turkey, rice, black beans, and Rotel tomatoes together and put the mixture in a warm oven until the tortillas are ready.

Homemade Tortillas

3-4 cups of fresh ground wheat flour
1 t salt
1 cup warm water
1/3 cup olive oil

In a mixture with a heavy duty attachment (I don't know what to call what I use, but don't use wire whisks, because they will break... I have done that) put flour and salt in the bowl. In a glass measuring cup put both the warm water and the oil together. Turn on the mixer to a low speed and slowly add the water/oil to the flour/salt until combined. Continue mixing until it is one big ball, which is not too long usually under a minute. Put tortilla dough into a plastic baggie or cover with plastic to rest for at least 30 minutes to allow the flour to absorb the liquids properly and to be easier to manage. After resting, divide dough into 1" balls and roll into circles and cook on a griddle, flipping halfway through to cook both sides. Store cooked tortillas covered to keep warm until dinner is served.

Serve with cheese, sour cream, salsa, etc. and enjoy!

Phil has been saying that he wants me to make homemake tortillas, so now I will, with this recipe. But I am curious about what kitchen "tool" I will use in place of a whisk. Got any suggestions?

And poor Jacob! I can't believe that you figured out that the problem was a crick in his neck. It is so hard for little ones to deal with things like that, much less communicate it!
